Canopy, a restaurant with Parisian charm

An urban decor inspired by the industrial past, created by the architect Jean-Philippe Nuel. A locavore and bold menu signed by Chef Robin Kubarek. All the ingredients for success are there for this modern French restaurant.

A central place in the hotel for this restaurant

The modern French restaurant, L’Esprit Nouveau, occupies a central place in the hotel. It is bathed in skylight, offered by an industrial-style glass roof.

This high place of life exudes a chic and versatile atmosphere in the image of the Trocadéro district. It takes its name “L’Esprit Nouveau” from Le Corbusier’s review of the same name.

The aim of the latter was to emphasize aesthetics, modernity and a certain visionary view of art, architecture, literature and social issues. The least we can say is that it’s a success!

Inspired by Le Corbusier

The restaurant’s furniture and decor are directly inspired by Le Corbusier and the history of the surrounding district, thus reflecting the ambition of the chef’s cuisine. Robin Kubarek indeed gets its essence from the place and local products.

The Chef also plays in his culinary creations, just like the interplay of lines and curves in the restaurant, with perspectives, depth, circles of flavors and different textures.

L’Esprit Nouveau is an extension of the Chef’s cuisine: colourful, conscientious, inspired by his local environment, creative. We love !

An original and modern head office

The Canopy restaurant is described by regular customers as a place to live, a headquarters, a benchmark for the latest discoveries and/or trends. The inhabitants of the 16th arrondissement will feel at home here, as will all Parisians who want to discover the hidden gold nuggets of this district. The time of a meal, the travelers of the world, keep a memorable memory. It is your turn!

An eclectic and colorful program

This is what awaits you in this place of life apart:

  • Stand up comedians
  • Live music dinners (singer, DJ, musician)
  • Creator popups
  • Temporary art exhibitions
  • Video Dressing from makers
  • master class

Within L’Esprit Nouveau, the teams create events together, for our greatest pleasure.

An exceptional chef: Robin Kubarek

Back on his journey

Graduated from the EPMT (Ecole de Paris des Métiers de la Table), he started as a kitchen clerk at the Régina Paris hotel. He then moved to the Hilton Paris La Défense for nine years, until he took the position of sous-chef, which he held for three years. In 2020 he became head chef at the Canopy by Hilton Paris Trocadéro for L’esprit Nouveau and for the Rooftop Eylau Paris.

His credo: respect nature and the seasons. To do this, nothing beats taking the products as a whole and building a relationship of trust with the producers. With an emphasis on quality to preserve the flavour, this is his miracle recipe that will make your taste buds tremble.

His ability to cultivate product variations, harmony on the plate and creative audacity is quite impressive. Just like his daring when he experiments with new techniques, artistic dressings and the awakening of your five senses…
