To kick off our range of recipes in style, we’ve decided to bring you a staple ingredient that is becoming increasingly popular with consumers, but unknown to many families: Quinoa! Here is a very tasty and super fresh salad to discover what quinoa is or to console you with the idea that this food is just as good in taste as it is for health!

To make the vinaigrette:
– 3 tablespoons of balsamic vinegar
– 1 teaspoon cumin
– 3 tablespoons of olive oil
– pepper and salt
For the salad itself:
– 70 g to 80 g quinoa
– 1 onion
– 1 zucchini
– 2 carrots
– 2 tomatoes

  1. First, start by washing your vegetables. When done, carefully peel the onion, zucchini and carrot.
  2. Next, it’s time to cook your quinoa. Bring a pan of salted water to the boil and dip the quinoa in it for about 15 minutes.
  3. When the quinoa is cooked, it is very important to drain it well and then let it cool separately; you can put it in the fridge for this.
  4. While the quinoa is stored on its side and allowed to cool, it’s up to you to make the dressing. Take a large bowl and mix all the necessary ingredients in it and set aside.
  5. Now all you have to do is mix the quinoa (which should normally be cold by now…) with the rest of your salad ingredients and serve! †

Note that it is quite possible to vary the delights, adding a few small pieces of grilled paprika in the preparation, or a few mint leaves, which will give an extra freshness… It’s up to you to see how you want to adapt the recipe to your taste!

2/ The recipe for Moroccan salads

For this second preparation, we decided to give you a little exoticism, so we naturally turned to Morocco, with a fresh and delicious recipe that will please all members of the family. This recipe is relatively easy to prepare and doesn’t take much time either. Do not hesitate to hire your children to lend you a hand, they will be happy to help you prepare an exotic dish! And as for the result, do not doubt it for a moment, it will only get better in the end…

  • Preparation time: 15 minutes to 20 minutes
  • Difficulty: really very easy
  • The ingredients list (the indicated quantities are calculated for 4 people):

For the dressing:

– cumin

– Bell pepper

– 2 squeezed lemons

– olive oil

– pepper and salt

For the salad itself:

– 4 tomatoes

– 2 onions

– 2 cucumbers

– flat leaf parsley

– Fresh mint

  1. First you start by washing your vegetables, then carefully peel the cucumbers and onions.
  2. Then cut the tomatoes into cubes, keep the pulp, juice and seeds well and set everything aside.
  3. Now, detail the cucumbers, still in small dice, then again, set everything aside.
  4. Chop the onions as finely as possible and put them back.
  5. Now let’s start making the vinaigrette. To do this, take a large bowl and simply mix the lemon juice, salt and pepper, and olive oil. Some of you may want to add a touch of mustard to your taste, but please note that this is not the case in the original recipe.
  6. When the vinaigrette is prepared as directed in the previous step, add the paprika and cumin.
  7. Separately, you now chop the sprigs of mint very finely, then you have to process them in the vinaigrette. Then mix everything well with a fork or a small whisk, so that the sauce is perfectly homogeneous.
  8. Mix all the vegetables that you cut at the beginning of the preparation. To do this, put the tomatoes, onions, cucumbers in a large salad bowl or in a deep dish and stir well.
  9. Now all that remains is sauce, and this should be done according to the taste of each guest. That’s why we recommend that you keep the vinaigrette aside, in a large bowl, so that everyone can help themselves.
  10. Finally, refrigerate your preparation to give the salad time to take on a balanced flavor, but also because it’s usually served cold.
  11. Just before serving, you can finely chop the sprigs of flat-leaf parsley and sprinkle it over the salad to make it even tastier.

Absolutely nothing prevents you from varying this original salad recipe a bit… For example, you can add a few small cubes of avocados, bean sprouts, to see what you want… But don’t doubt it for a moment, the original recipe is absolutely delicious like we presented it to you!

Our soups for the summer

1/ Gazpacho, a timeless classic

It is necessary to introduce you to gazpacho, this cold soup that comes to us from Spain and which there represents a true national symbol and absolute gastronomic pride! We offer you a very classic recipe at first, because in France gazpacho is all too often set aside and does not fit into people’s eating habits, which is a shame. †

  • Preparation time: about 30 minutes
  • Difficulty: really very easy
  • The ingredients list (the indicated quantities are calculated for 4 people):

– 800 grams of very ripe tomatoes on the vine

– 2 cucumbers

– 2 red peppers

– 1 onion

– 1 clove of garlic

– a few basil leaves

– 10 cl olive oil

– 10 cl sherry vinegar (or wine)

– salt and pepper

– 200 grams of breadcrumbs

  1. Before everything else you will have to prune the tomatoes, ie: cut the skin of the tomatoes crosswise and immerse them in boiling water for 1 minute. Drain and then remove the skin.
  2. Then cut the tomatoes into quarters and sow them. Next, peel the peppers by slicing them, remove all the seeds and strings inside, then insert the blade of a utility knife between the flesh and skin.
  3. When you’re ready, cut the bell pepper strips into cubes.
  4. Now you will peel and dice the cucumbers alternately, then strip and coarsely chop the basil.
  5. Now you have to peel and finely chop the garlic and onion, and when that is done you can mix all these vegetables in a salad bowl and add the 10 cl of olive oil.
  6. Season with salt and pepper, taste and season if necessary.
  7. Crumble the breadcrumbs in the bowl of a mixer, pour in the sherry vinegar and let the breadcrumbs soak, then pour the vegetables and their juices into the mixing bowl
  8. Now you can mix everything until you have a very smooth and homogeneous mixture, which must then be sieved.
  9. Put your gazpacho in the fridge for an hour, because it is served chilled!

2/ Gazpacho, in a more original version

After our most classic gazpacho recipe, we are now going to offer you a variant that is also very successful and that will undoubtedly delight your taste buds! This recipe uses zucchini and ricotta as the base ingredients.

  • Preparation time: about 20 minutes
  • Cooking time: 10 minutes
  • Difficulty: really very easy
  • The ingredients list (the indicated quantities are calculated for 4 people):

– 500 grams of zucchini
– 1 bunch of basil
– 3 tablespoons of olive oil
– 3 tablespoons cider vinegar
– 3 tablespoons of ricotta
– 2 small spring onions
– 15 cl of water
– salt and pepper

  1. Before you start cooking, you need to wash the zucchini.
  2. Once that’s done, you can remove and discard the ends, then cut the zucchini into rounds.
  3. Steam these rings for 10 minutes.
  4. Now you are going to remove the stalk from the onions, peel them and finally cut them into pieces
  5. You can now pick the basil leaves.
  6. Put all the ingredients in your blender (or in a bowl that will mix them), and mix very well, gradually adding the water.
  7. If necessary, you can completely adjust the spices.
  8. Refrigerate your zucchini gazpacho for about 1 hour and take it out when it’s time to eat!

3/ Frozen cucumber soup

For this latest cold soup recipe, we have decided to offer you a cucumber-based preparation. After trying it out at home, we can tell you that it has been a great success, both with adults and children, which in itself is a performance not to be underestimated!

  • Preparation time: about 20 minutes
  • Difficulty: really very easy
  • The ingredients list (the indicated quantities are calculated for 4 people):

– 1 cucumber

– 100 grams of cottage cheese

– 10 sprigs of chives

– 1 handful of pine nuts

– Espelette pepper (to be dosed according to your own taste and of course the children…)

– salt and pepper

  1. To start, wash the chives before finely slicing them.
  2. Once that’s done, you can move on to the cucumber. Start by cutting off the ends and discarding them, then peel it, remove the seeds with a spoon and cut the pulp into small pieces.
  3. Once this is done, you can mix the pulp with about 2/3 or 3/4 of the chopped chives, a little Espelette pepper (better too little than too much…), salt and pepper.
  4. All you have to do is add the cottage cheese and mix everything well again.
  5. Finally, keep your soup in the fridge for a good half hour and take it out when you’re ready to eat.
  6. If desired, divide the soup into verrines which you then decorate nicely with some pine nuts, the rest of the chives and a pinch of Espelette pepper (optional).
  7. That’s all, you can serve!
